Chicken Caesar Wraps are one of my husband's all-time favorite foods. In fact, it is the only meal in our house that has ever been eaten on a weekly basis...though that faded out a while ago on account of me getting tired of them. Routine is great, but I like variety in my food.
So, I decided to try to take all of the flavors that Daniel loves so much and put them into a different form...the wonton skin. This may be my new favorite medium. You can put anything in these little guys and they'll turn into crispy, delicious little finger foods!
Next time, I'll make sure to have shredded lettuce in the house to sprinkle on top of them. The pieces of lettuce in the bag of salad we had were a little too chunky and awkward to fit nicely on top of these little portions.

Makes 24 bites

Crispy Chicken Caesar Bites
Makes 24 bites
- 24 wonton skins
- 1 cup cooked, chopped chicken
- 1/2 cup shredded cheddar cheese
- 4 Tbs light caesar dressing
- shredded or chopped lettuce
1. Preheat oven to 325 degrees.
2. Press wonton skins into a greased mini muffin tin, 1 skin per mini muffin cup, pressing lightly to avoid tearing.
3. Divide chicken between the 24 cups.
