I love potatoes. In a big way. Especially fried...or covered in cheese. But since I've been trying to lose weight, I've been trying really, really hard to stay away from fried things...and excessive amounts of cheese.
This recipe would be even more delicious with more cheese and some bacon, so feel free to jazz it up for yourselves, but Daniel doesn't like bacon and I'm learning to just say "no" to cheese. Okay, it wasn't really "no." It was more like, "okay, just a little bit...".
Because eating healthier shouldn't mean sacrificing flavor! These are delicious and they totally satisfy my potato craving! I can eat 4 bites for 120 calories, which means I can either eat even more of them or have plenty of calories left to come up with something else fun to eat with these. I am so in love with these little guys that fill me up and make me feel like I'm eating more than I actually am.
I liked them plenty plain or topped with a little sour cream, but Daniel preferred to eat them with ketchup. Either way, they were the perfect comfort food for Sunday dinner!

Thank you, Amy! I hope you like them as much as we do!

These are brilliant! And they look absolutely delicious.
These look so good! Perfect for game days!
These look so unique! I love twice baked potatoes but they're so much work. They looks like they're much easier and very yummy too. Have you ever tried keeping the peeling on for extra healthy bites?
Melissa, I kept the peel on the potatoes! I just mashed it up with the rest of the stuff! :-)
These look so yummy and easy!
