Weekly Meal Plan

A friend of mine asked if I would consider posting some of my weekly meal plans, so of course I put a post together for her!  Our menus include quite a few leftover nights, because there are only two of us, so it seems like there are always leftovers around!  This is technically last week's menu, but I figured it would be a much more interesting post with a few recipes and pictures included.

Sunday - Crustless Mini Quiche Bites and Honeycrisp Apples


Monday - Quinoa Risotto Bites


Tuesday - Whole Wheat Thin Spaghetti w/ Shredded Zucchini & Ground Beef Spaghetti Sauce, Rhodes Rolls

Wednesday - Quesadillas and Enchilada Soup

Thursday - Leftovers

Friday - Leftovers/Peanut Butter & Jelly Sandwiches

Saturday - Subway

looks yummy! :) Thanks for doing this post for me! :D We always end up with lots of leftovers too.

What's your recipe for Enchilada soup? I got a mix as a gift and it was AMAZING but I want to learn to make it myself since that is healthier. :)
PS: I like eating it with rice and tortillas!

Ooh, yes, yes, yes! Great idea!! By the way, I really want to try your mini quiche bites for breakfast. You know how horrible I am at eating breakfast, especially getting in some protein early in the day. I think this is a fabulous and fast thing to try! Love you sis. You never cease to amaze me!

This week our enchilada soup was just a mix we bought from the store. I've been trying to play around with the copycat recipe for Chili's Chicken Enchilada Soup, but haven't gotten it quite right yet.
