Weekly Meal Plan
Sunday – Saucy Asian Meatballs (from Gimme Some Oven), brown rice, and broccoli
Monday – Crockpot Italian Chicken, mixed vegetables, and rolls (AKA leftover hamburger buns)
Tuesday – Leftovers. I love that our meal plan is flexible and can be altered when there is an abundance of Italian Chicken in the house.
Wednesday – Leftovers. Again. Next time I make Crockpot Italian Chicken, I’m cutting the recipe in half. Or thirds. Or quarters. So. Much. Chicken.
Thursday – Cheesy Taco Rice. I definitely just threw in whatever we had – ground beef, taco seasoning, cheddar cheese soup, frozen corn…I’m sure there was more. I also forgot to take a picture. Oops.
Friday – Sonoran Hotdogs with our super amazing friends who came to visit from Albuquerque. If you’ve never heard of a Sonoran Hotdog, it’s an Arizona thing. It is a bacon-wrapped hotdog topped with tomatoes, onions, pinto beans, cheese, mayo, mustard, jalapeno sauce, all in a soft Mexican roll.
Saturday – When friends are in town, we take them to all of our favorite places, so we had Jerry Bob’s for breakfast, Wings & Rice (best fried rice ever) for lunch, and roll-your-own sushi for dinner. Yes, we did eat our sushi in the dark, in front of a fire (in 100 degree weather), listening to music, after a game of Killer Bunnies and swimming in their resort pool. Such an amazing night.
